The broth of some Vietnamese rice noodle soups is clear while the broth of Soup cake (Banh Canh) is gelatinous. The rice noodle of Bun rieu is about 1 millimeters thin. The rice noodle of Bun bo Hue is 5 times thicker than the Bun rieu và the Banh canh’s noodle is 5 times thicker than the Bun bo Hue’s noodle. The noodle is big và Vietnamese called it “cake”. We have the soup (broth) and the “cake” so that we name this food Soup cake. 11. Noodle with steamed duck (Mỳ vịt tiềm)

The main ingredient is duck leg which is soaked in wine, ginger and soy sauce before being flash fried. By this way we can preserves the integrity of the duck meat and removes much of the duck fat which isn’t good for health. After that it’s simmered in the broth of Vietnamese mi vit tiem made from pork bone, ginger, star aniseed, cinnamon, đen cardamom, shiitake until it’s tender (not mushy), deeply seasoned & brown. Egg noodle, shiitake, boiled greens, green onion are put into the bowl before the broth is poured on them. The duck leg is served whole on the side.

12. Congee with chicken or duck (Cháo gà, Cháo vịt)

Vietnamese chicken & rice congee is not only delicious but also healthy. It’s a comfort dish of many Vietnamese people when it’s cold or rainy, especially when they’re sick. The ingredients are garden chicken, high-class long-grain rice, cabbage, persicaria odorata (Vietnamese coriander), ginger, lime (or vinegar) & spices (salt, fish sauce, sugar, chili, đen pepper). The rice should be pan toasted. Then the chicken, rice and ginger are put into a big pot & bring to boil. The congee may be cooked in many different stages và textures depending on the recipes. But the rice must completely break down but still evident và the chicken is tender but not mushy. Chopped green onion is put into the pot before stopping cooking. The cook uses the shredded chicken, shredded cabbage & Vietnamese coriander to lớn make the sweet and sour salad. The sauce of salad is made from lime juice or vinegar, sugar, salt and fish sauce.

Main ingredients of Com Tam is broken rice, which is steamed before being served. This kind of steamed rice is smaller than normal steamed rice so that it’s comfortable to eat. Toppings of Broken Rice dishes are grilled pork chop, Vietnamese pork pie made from pork, wood ear mushroom, jicama egg & thinly shredded pork skin mixed with toasted rice powder và fried egg. Some people don’t want lớn eat all of them with their Com Tam dish but only one or two main toppings. Chè (roughly translates as “sweet soup” or “sweet pudding”) is a Vietnamese term that refers khổng lồ any traditional Vietnamese sweet beverage, dessert soup or pudding. It may be served hot or cold in bowls, glasses, or over ice và eaten with a spoon.
